Chicken and Pineapple Burgers

I've made it to Australia and I am having a really good time!  I am sooo excited to tell you all of my adventures.  I really don't have the time to talk (write) about it all right now.  I promise I will write you all soon.  For a short recap of my couple of days here: I've seen wild kangeroos, I've tried vegemite, and I've been to an Aussie beach!  I will go more in depth later but I just wanted you to know that I haven't forgotten you guys.  I am in love with this country.  No pictures for today but I promise that I will post again as soon as I am settled in East Freo.  Please comment!

Jumping Jehosaphat

The adventure begins tomorrow.  Yes, that is right, I am leaving for Australia TOMORROW.  Tomorrow morning to be exact.  Why yes, I am pumped.  I am also a little nervous.  This will be the longest I've been away from home and I can't call. :(  Thank the Lord for skype!  I'm just going to use my Garaywa skills and give myself a stuffed animal, special ice, and not think about it.  I'm also a combination of nervous/excited for the plane ride.  Please pray that it goes smoothly.  I don't have a photo for today but I do have a wonderful story about today.  Today, I got up a little later than I had hoped and went to my grandmother's house.  She mended a cardigan for me while I chilled in my pajamas.  I got a message from my friend Rebecca asking if I could meet her and some friends for lunch.  Of course my reply was yes.  Then my mom called and asked me to check out my sister and bring her to work.  I did my sisterly duties and then visited my friends at Wendy's for a late lunch.  Then two of my friends left to run errands.  My friend Jessica rode with me.  She then anounced that she had to pick up something from the church.  This is nothing unusual.  She always has something to pick up from the church.  So we went into the family life center and BAM! There was a surprise party for me!  I've never had a surprise party before.  It was awesome.  My mom, sister, both grandmothers, aunt, great aunt and uncle, cousins, friends and more were there to see me.  Everyone wrote me a letter too!  My friends even bought my favorite candy - White Chocolate Reese's!  There were signs hung on the walls and they decorated coke bottles for daisies!  My friends are the absolute best!  I had the most wonderful time and I was truly surprised.  Thank you Jessica and Sarah!

Didgeridoos and Pillow Stuffing

This post is going to be short and sweet and to the point.  I have TWO DAYS till I leave for AUSTRALIA!!  I'm super pumped but I need your prayers.  I need you to pray for me to stay focused on why I am there.  I have always had trouble with focus.  I need patience on that flight too.  Please pray for me and continue to read my posts under the Australia tab.  Also pray that my recent health problems will clear up.  That is all. :)  Now, I don't leave a post without a picture.  I don't really have a good one..but I do have this one for you.  Please feel free to laugh.

The Final Countdown

Whew!  It surely has been a while since I last posted.  I have had many fun adventures while you were gone but no pictures. :(  Last Thursday, I went  to the river with my friends and we kayaked.  It was so much fun.  It was my first time to kayak.  We stopped on a sand bar to have lunch and swam in the swimming area for a while too.  After we got back to my friend Sarah's house, we cleaned up and prepared for the second part of the night.  We had a bonfire and burned our school papers and books.  Then we roasted hotdogs and marshmellows.  It was quite fun.  We ended the evening by playing board games.  The next morning, I left with my family for Destin, Florida.  My great uncle got married in Sandestin, Florida.  When we got there Friday, we shopped around and avoided the great downpour outside.  Saturday turned out better.  We went to the Sandestin beach around ten to meet with all the other family members there.  It was like a family reunion on the beach.  I had time to lay out and swim in the ocean.  Later, we cleaned up for the wedding.  The wedding on the beach was wonderful.  It was beautiful weather.  The reception was at a really nice restuarant.  Swanky :).  Then we headed home Sunday.  So, here I am now with so much to show you and no pictures.  Oh well.  Also, I leave for Australia this weekend!  FIVE DAYS!  I'm so excited.  I do have alot of last minute tasks to take care of.  I really didn't want to leave you without any pictures so here is a collection of stuff that inspires me:

Dear Prudence

So, today I received my final grades for the semester.  They were not that good.  In fact, my GPA dropped a whole lot.  Ten points.  I want to contribute this to the lack of art classes this semester.  I know that it does have something to do with the fact that this was my most horrible semester ever.  A lot of stuff happened.  Anyway,  I can not be a party pooper here...blog pooper.....blog party pooper?  I just had to get that off of my chest.  Now, I just want to kick college in the whoopsies.  I am going to have a 4.0 next semester.  A girl can dream, right?  What I really wanted to blog about was geocaching.  Have any of you gone geocaching before?  I kinda like it.  The thrill of feeling like a super secret spy is how I think of it.  I am enjoying it quit a bit.  Although, I did not enjoy crawling around in bark while wearing a dress.  Here is a tip for all you new geocachers like me: do not geocache in a dress.  It was laundry day...what can I say?  In other news, 10 DAYS TILL AUSTRALIA!  I'm so ready to go and forget about Mississippi College among other things.  I have this incredible excitement that I haven't felt in a long time.  As my friend would say,Eep!  I am so ready to go, meet the wonderful people, and start building relationships.  Words can not describe how I feel.  So, here are some pictures:

Pop, Lock, and Drop It

Today has been a rather successful day.  I went to town with my mother and we bought groceries to make cake pops!  I have been in the mood to make cake pops for quite awhile.  After having them this past week, from a bakery, I just had to make my own.  I went to my grandmother's house to make the cake pops and she helped me, especially when it came time to coat, stick, and sprinkle.  I decided to make my pops red velvet.  I just love red velvet cake mix.  Anyway, I have enjoyed my cake pops and here are a couple of pictures and the recipe:




Katherine's Cake Pops


Ingredients:

One Cake Mix (of your choice)
One Can of Icing (your choice again)
One Package of Almond Bark
Skewers or Sucker Sticks
Nonpareil Sprinkles

Bake cake mix according to the directions on the back of the box.  I used two nine inch round pans.  When cake is done baking let it cool.  Crumble the cake (I did this one cake layer at a time) into a large mixing bowl.  Put 1/4 of the can of icing into the bowl for each layer or 1/2 can for the whole cake mix.  Mix well and make into one inch balls.  I really just "eyed" it to my liking.  Put in freezer for approx. 30 minutes.  When ready, melt half a pack of the Almond Bark for each layer or the whole pack for both layers.  Use a fork and roll the cake ball into the bark.  Lift with the fork to drain excess bark.  Place on a cookie sheet covered with wax paper (we used foil).  Stick ball with stick and sprinkle.  When the hot Almond Bark hits the cold cake ball, it works better and the bark hardens faster.  Let them set and enjoy!

Shots of Summer

I've been really blog lazy lately.  I do give myself the supreme excuse of finishing my sophomore year of college.  I finished all my exams and now (well, since last monday) get a short dose of lazy freedom.  How great is it to know that you can be 100 percent lazy all day and know that it's okay?  It feels great!  I do want to take advantage of this time that I have here in Mississippi though.  I mean, I only leave for Australia in 12 days.  12 DAYS!!  I'm freaking.  I hope I can get some great times and memories done in this short period of time though.  Last Tuesday I went and played Bunco with my cousin.  She is part of a really fun Bunco team and they invited me over as a substitute.  I had never played Bunco in my life but I was the last girl to have a Big Bunco and therefore, got a prize at the end.  It was the cutest little set from Bath and Body Works.  After Bunco, I traveled to visit a friend.  We had a great time doing nothing.  I stayed with her until Saturday night.  The whole point of my visit was to creep her "date" with an ex-boyfriend at the movies.  I was so into the movie that I forgot I was supposed to watch her.  We saw Fast Five.  I recommend it.  Then, this Sunday was Mother's Day and I got to spend the day with my wonderful mother.  I think she is the best.  I love everything about her even when she drives me crazy.  I've been making earrings lately to add to my Confessions collection.  Be sure to check it out: http://confessionofart.blogspot.com/.  Here are some pictures of my life lately:
